WHAT IS KOMBUCHA ?
WHAT SHOULD I DO WITH THE EMPTY BOTTLES ?
At Elevation Kombucha, We believe in the well-being of the planet.
Using glass swing top bottles, not only minimizes the Eco footprint of cans and plastic bottles but at Elevation Kombucha, we try hard to reuse the glass bottles. There is no need for replacement plastic lids either.
Just return your rinsed empty bottle and we will clean and sanitize them, before refilling them with fresh brewed Kombucha ready for you to drink.
WHAT ARE THE HEALTH BENEFITS ?
There are many powerful health benefits from drinking Kombucha.

The fermantion process produces Acetic Acid (also found in vinegar). Like the polyphenois in tea, Acetic Acid is able to kill many potentialharmful microorganisms.
Large amounts of good bacteria also grow in the fermenting tea and several species of Lactic-Acid ​bacteria which have a probiotic function.

Probiotics provide your gut with healthy bacteria. These "Good Bacteria", can improve many aspects of health, including digestion, inflammation and even weight loss.
For this reason, adding Kombucha to your diet may improve your health in many ways.

HOW SHOULD I STORE MY KOMBUCHA ?
As mentioned above, fermentation continues until Kombucha is refrigerated.
Please keep your Kombucha in the fridge until ready to drink.
If left out at room temperature for too long, kombucha can become over carbonated when opened and make a mess, or worse, the bottles may explode if left for excessive amounts of time at room temperature.
DOES KOMBUCHA CONTAIN ALCOHOL ?
During the fermentation process, trace amounts of non- intoxicating alcohol are produced, this is a natural process in the brewing of raw Kombucha. Alcohol is a vital nutrient and preservative in Kombucha, it is there to prevent mould and helps to dissolve all the nutrients before the body can absorb them
In BC Canada, the legal amount of alcohol to be permitted in non-alcoholic drinks, such as Kombucha is 1% ABV or less.
Although this is a small amount, it is recommend to seek medical advice if pregnant or unable to consume alcohol.
Trace amounts of alcohol have been found in many every day foods, so if you don't have a tolerance for alcohol, relax and enjoy the many health benefits of raw Kombucha.
WHAT ARE THE FLOATIES AT THE TOP OF THE BOTTLE ?
As Elevation Kombucha is RAW and LIVING, a new baby SCOBY may appear at the head space of the bottle. This is a very sure sign that the Kombucha is healthy and has vitality, producing living strands of culture !
If you want an extra shot of bacteria and microorganisms, you can swallow the baby scoby just like an oyster shot. Or you can just strain it out.
Kombucha is a fermented, sweetened black or green tea. It was thought to have originated in China, around 220 B.C.
A SCOBY (Symbiotic Culture Of Bacteria And Yeast), is added to the sweetened tea and left to ferment for 7-14 days at room temperature. The sugar from the sweetened tea is consumed by the bacteria and yeast in the SCOBY and also feeds it which aids in the growth of bacteria and acids .Beneficial probiotics are also produced during the fermentation process.
Once fermented to the desired taste (sweet and tart), the Kombucha has flavors added to it, such as fruits, herbs and spices and then bottled and left for a further few days to naturally carbonate in the bottles.
When carbonation is at the correct level, the bottles are placed in refrigeration, this is because Elevation Kombucha is a raw beverage containing live active cultures and refrigeration haults the fermentation process, keeping the Kombucha fresh and stopping the Kombucha from continuing to carbonate.
